This is not your standard, old, dried out grocery store blend. N.W. SALTZ has sourced the highest quality peppercorns, still full of their essential oils. A difference you can see in the vibrant colors and plump peppercorns.
Our Black Peppercorns are sourced from India, Indonesia and Vietnam (depending on the time of year) and are picked when the berry hasn’t fully ripened. This whole black peppercorn produces a distinctly spicy flavor which is slightly hot and biting with a just a hint of sweetness.
White peppercorn berries are allowed to fully ripen before they are picked and the black outer shell is then removed in one of two ways. Sarawak peppercorns are held under a constantly flowing stream of spring water while ours are Muntok peppercorns which are soaked in water until the black shell loosens. This gives White pepper a subtle, less intense flavor and cooks will often season more liberally with white pepper than with black pepper.
Green peppercorns have a pleasant delectable quality that has made this a sought after gourmet pepper. The process of producing these Green Peppercorns begins with the picking of the immature green fruits from the same vine that produces the popular black peppercorn. These unripened peppercorns are then placed in boiling water, treated with a potassium sulphite, and then they are either dehydrated or frozen. The sulfite is an oxidase inhibitor that prevents the blackening from oxidation that is normally catalyzed by enzymes. The ensuing result is that these Green peppercorns are milder in flavor and bite than the more common black peppercorns.
Grown in Brazil these gourmet pink peppercorns are not related to black peppercorns. They are prized for their spectacular reddish color (some folks call them red peppercorns) and they have a delightful spicy-sweet flavor with hints of citrus.
