Green peppercorns have a pleasant delectable quality that has made this a sought after gourmet pepper.
The process of producing these Green Peppercorns begins with the picking of the immature green fruits from the same vine that produces the popular black peppercorn. These unripened peppercorns are then placed in boiling water, treated with a potassium sulphite, and then they are either dehydrated or frozen. The sulfite is an oxidase inhibitor that prevents the blackening from oxidation that is normally catalyzed by enzymes.
The ensuing result is that these Green peppercorns are milder in bite than the more common black peppercorns, with a unique flavor for the distinguished palette.
As with all of our peppercorns it is best to store these in a cool, dark place as they will keep their flavor for 1-2 years (unlike ground pepper which tends to begin to lose its flavor after about 4 months). So if you don’t already have a peppermill get one and grind your own as freshly ground pepper provides a more robust flavorful experience than ground pepper.
Good with steak, chicken, eggs, fish, pork, salads, soup, strawberries and tomatoes.
